Yellowtail Snapper Key West Style — Lightest White Fish in the Ocean

Prep: 10 minCook: 8 minServes: 2-3

Yellowtail snapper is the crown jewel of the Florida Keys — the lightest, most delicate white fish you'll ever eat. The meat is so tender it practically dissolves on your tongue, with a sweet, clean flavor that needs nothing more than butter, lime, and heat. This simple Keys-style preparation lets the yellowtail be the star.

Ingredients

  • 3 yellowtail snapper fillets (5-6 oz each), skin on
  • 2 tbsp olive oil
  • Salt and white pepper
  • 3 tbsp unsalted butter
  • Juice of 2 Key limes (or 1 regular lime)
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Key lime zest

Instructions

  1. 1

Pat fillets dry. Season both sides with salt and white pepper.

  2. 2

Heat olive oil in a non-stick skillet over medium-high heat until shimmering.

  3. 3

Place fillets skin-side down. Cook 3 minutes without moving until skin is golden and crispy.

  4. 4

Flip gently — yellowtail is fragile. Cook 2 minutes more.

  5. 5

Remove fish to a warm plate. Reduce heat to low.

  6. 6

Add butter, lime juice, garlic, and lime zest to the pan. Swirl until melted and fragrant (30 seconds).

  7. 7

Return fillets to the pan, spoon sauce over them for 30 seconds.

  8. 8

Sprinkle parsley on top. Serve immediately with rice, black beans, or a simple salad.

Pro Tip

Yellowtail snapper is the most delicate white fish in Florida waters — handle it like it’s made of glass. Use a thin fish spatula for flipping. Don’t overcook: it’s done when the meat turns from translucent to opaque white and flakes with the gentlest touch. The skin is thin and edible — get it crispy. Yellowtail is also incredible raw as crudo or ceviche; the meat is that clean.
