Pat fillets dry. Season both sides with salt and white pepper.
Heat olive oil in a non-stick skillet over medium-high heat until shimmering.
Place fillets skin-side down. Cook 3 minutes without moving until skin is golden and crispy.
Flip gently — yellowtail is fragile. Cook 2 minutes more.
Remove fish to a warm plate. Reduce heat to low.
Add butter, lime juice, garlic, and lime zest to the pan. Swirl until melted and fragrant (30 seconds).
Return fillets to the pan, spoon sauce over them for 30 seconds.
Sprinkle parsley on top. Serve immediately with rice, black beans, or a simple salad.
